Where it all began

On August 13, 1993, in the midst of a summer of drought, crisis, and high bank interest rates, Paquita, the Laredo mother, lit the kitchen stove, David and Miguel poured the first draft beers, and served the first meals in a tiny space with several tables, a lot of fear, and even more excitement.

Their commitment has always been to quality products. And they knew the way to achieve this. They were at Mercamadrid at 5 a.m. and selected the best. Their red and white shrimp were soon appreciated throughout Madrid, as was the quality of a winery that was growing judiciously.

In 2003, the Laredo brothers’ Mitulo restaurant was claiming its place among the best. Even though the bar, dining room, kitchen, and storage room all fit into 60 square meters, it was urgent to find another location.

The big leap

The curtain rose in February 2004 with a key addition: Javier. The third brother took charge of a spacious bar, which would soon become a draw for new and demanding customers.

David promoted the creation of new dishes. He successfully navigated the hectic pace of orders coming in and out of the small kitchen, and something essential they had set for themselves from the beginning: maintaining the high level of quality their customers demanded.

2012...

Their initial suspicion that the location wasn’t permanent was confirmed. Miguel, David, and Javier shared their concerns with two excellent architects and friends, Joaquín Torres and Rafael Llamazares, who helped them make the new Laredo they had envisioned a reality.

The transition from Taberna Laredo to Doctor Castelo’s current Laredo location wasn’t a simple transition. It opened on June 6, 2012. The first few days were incredibly tough. “And we already had experience!!!” says Miguel.

In the dining room, they soon began serving more than a hundred diners daily. The kitchen was strengthened with more staff, more investment, and constant updates to the menu. New salads, seafood, rice dishes, stews, meats, fish, vegetables, and more were introduced.

Despite everything, Laredo remains true to its roots. Absolute commitment to product quality. Innovation with seasonal offerings. Close customer service. And attention to the smallest details.

Today, its bar is an undisputed landmark in the city. Here you can enjoy any dish or wine from the menu. With a cuisine whose exquisite attention to detail is praised by all. And with a climate-controlled wine cellar, which offers innovative offerings from the best national and international producers every day.
